Ingredients Serving: 2

  1. 1.5 cups rice
  2. Salt to taste
  3. 1/2tsp oil
  4. 2.5 cups water
  5. 1/2cup grated coconut
  6. 1.5 cups peeled and chopped raw mangoes
  7. 1 tspn jaggery(optional)
  8. 1 green chili chopped
  9. 1tspn sesame seeds
  10. 3 to 4 red chilli dry deseeded
  11. 1 green chilli chopped
  12. 2 tspn peanuts
  13. Ingredients for mango rice
  14. 3 tspn sesame oil
  15. 1 or 2 dry red chilli
  16. 1 tspn mustard seeds
  17. 1tspn chana dal
  18. 1tspn urad dal
  19. 3 to 4 tbspn peanuts
  20. 1 pinch hing
  21. 1/4 turmeric powder
  22. 1 tblspn curry leaves
  23. Salt to taste

Instructions

  1. First soak the rice in water for 20 mins.then pressure cook the rice by adding water, salt, and oil for 2 whistles.when the steam cools down let the rice also cools at room temp.
  2. In the mean while when the rice is cooking lets make the paste .peel the raw mango and chopp it.put it in the mixer jar by adding red chillies deseeded, 1tspn sesame seeds, 2tspn peanuts, 1/2cup grated coconut and 1 tspn grated jaggery.
  3. Now grind it and make semi fine paste.
  4. Now take a pan , heat 3 tblspn oil and add 3 to 4 tblsp peanuts.
  5. Saute thepeanuts on low flame.
  6. Now add 1 tblsp mustard seeds , when it starts spluttering add chana dal and urad dal..
  7. Saute them till it gets brown in color.
  8. Now add curry leaves, red chilli dry, hing and haldi powder.
  9. Saute it and stirr it continously.
  10. Now add the Mango coconut paste.
  11. Stirr it and saute it for 3 to 4 mins.
  12. Then season with salt.
  13. Mix it very well so that they are combined to each other.
  14. Now off the flame.
  15. Then mix the cooked rice to it very well so that paste is combined to the rice perfectly.
  16. Now the Mango Rice are ready to eat..
  17. You can serve it withfried papads, chips or yoghurt.
