ABOUT Bajarbhang Kheer RECIPE

Some species are considered as weeds. They are wild, edible and nutritious. These are in fact wild blessings and are good source of plant based proteins mostly eaten in Northern India, Jammu and Kashmir, Punjab and Himachal during the fast. Very delicious.

Ingredients Serving: 3

  1. Bajarbhang 1/4 cup + 2 tbsp
  2. Milk 2 + 1/4 cup
  3. Soaked, peeled and sliced Almonds 6
  4. Raisins 20
  5. Melon seeds 1/2 tsp
  6. Green Cardamom 1
  7. Ground cashew powder 1 tbsp
  8. Sugar 5 tsp (or as per choice)

Instructions

  1. Soak bajarbhang in water and keep it aside for 30 minutes. Wash it well changing water every time.
  2. Take milk in the pan, add bajarbhang into it keep it on medium heat and boil well. Keep stirring in between.
  3. Add sliced almonds, raisins, cashew powder, melon seeds and sugar. Keep stirring.
  4. Garnish with rose petals, kewra or saffron (optional).
  5. Serve hot or cold.
