ABOUT KONKANI JHINGA HALDONI RECIPE

This recipe is prepared with wide variations throughout the coast of Maharashtra. Seafood is the most loved amongst the Konkan coast of Maharashtra. This is my version of Prawns Haldoni that i had learned from an old neighbour. This is the easiest version of haldoni

Ingredients Serving: 4

  1. Prawns, clean & deveined 250 grams
  2. onion 1 large
  3. tomatoes 2 large
  4. ginger Garlic paste 1 tablespoon
  5. Green chillies 2-3
  6. Curry leaves 1 sprig
  7. Dried red chillies 2
  8. Dessicated/fresh coconut 2 tablespoon
  9. Kashmiri red chilli powder 1 tablespoon
  10. turmeric powder 1/2 teaspoon
  11. coriander powder 1 tablespoon
  12. cumin powder 1 tablespoon
  13. oil 5 tbsp
  14. salt as per taste
  15. Handful of fresh chopped coriander

Instructions

  1. Grind tomatoes, coconut & red chillies to a fine paste. Chop the onions.
  2. Heat oil in a pan
  3. To this add curry leaves, chopped onions *& green chillies. Saute till the onions turn pink
  4. Once the onion turns pink, add the dry spices like turmeric, red chilli, coriander & cumin powders
  5. Next add the tomato coconut puree & mix
  6. Next add the ginger garlic paste
  7. Cook this until the tomatoes & masala is cooked well & oil separates.
  8. Once the oil separates, add the prawns & saute on high flame for 3 minutes.
  9. Then add half glass water & bring it to a boil.
  10. Cover the pan & cook for 10-12 minutes.
  11. Adjust salt & add fresh coriander.
  12. Serve hot with chawal ki roti & steamed rice.
