ABOUT Moqueca - Brazilian Fish Stew RECIPE

Traditional Fish stew cooked in coconut milk and palm oil. Tastes best when served with garlic rice or crusty bread

Ingredients Serving: 4

  1. 1/2 kg firm fish fillet cut in big cubes
  2. 1.5 tbsp Pepper ( adjust
  3. Salt to taste
  4. 1.5 tbsp lime juice
  5. 3 garlic cloves finely crushed
  6. 2 tbsp palm oil
  7. 1/2 cup spring onion sliced
  8. 1/2 cup red & yellow bell pepper chopped
  9. 1 cup tomatoes chopped
  10. 1/4 tsp red chili flakes
  11. 11/2 cup thick coconut milk
  12. 1 tbsp sweet paprika
  13. 1/4 tsp pepper
  14. 1/3 cup chopped cilantro

Instructions

  1. Marinate fish fillet pieces with garlic ,lime juice , salt and pepper for 30 minutes
  2. In a large pan , heat oil on medium heat.Add the chopped white onion and cook for few minutes until softened.
  3. Add the bell pepper, paprika, and red pepper flakes with salt and pepper
  4. Note: in case you don't get sweet paprika online, use regular paprika. Do not add sugar to recipe. Stew tastes best with sweet paprika
  5. Add in the chopped tomatoes and green part of spring onions.Cook for 5 minutes.Add chopped cilantro and mix well
  6. Use a large spoon to remove about half of the vegetables .Spread the remaining vegetables over the bottom of the pan evenly
  7. Arrange the fish pieces on the vegetables.Then add the previously removed vegetables, covering the fish. Pour coconut milk over the fish and vegetables.
  8. Bring stew to a simmer, reduce the heat, cover, and simmer for 15 minutes. Adjust seasonings if required
  9. Garnish with cilantro. Serve hot with rice or bread.
