Ingredients Serving: 4

  1. For the Dough :
  2. 1 tbsp Active dry yeast
  3. 2 tsp sugar
  4. 1 tsp Flour
  5. 1 tsp Salt
  6. 1 tsp oil or ghee
  7. 4 cup refined flour (maida) OR 2 cups whole wheat flour and 2 cups refined flour
  8. 1/4 cup lukewarm water
  9. 1/4 cup flour for rolling the kulchas
  10. For the stuffing :
  11. Cumin powder – 2½ teaspoon
  12. Punjabi garam masala - 1 tsp
  13. Green chili – 1, chopped finely
  14. Ginger garlic paste or freshly grated – 2 teaspoons( you may use only ginger also )
  15. Red chili powder for little spice– 1 teaspoon
  16. Amchur powder (dried mango powder) – ½ teaspoon
  17. Anardana powder(pomegranate powder)- 1/2 tsp
  18. Salt – to taste
  19. Potato – 2 medium boiled and grated
  20. 2 medium carrots washed, peeled and grated
  21. Coriander leaves washed and chopped 2 tbsp
  22. For Garnishing:
  23. 1 tbsp chopped coriander
  24. 1 tsp red chilly powder(Kashmiri mirch or degi mirch)

Instructions

  1. Preheat oven to 500F. If you have a pizza stone , put it inside the oven on lower rack and let it also preheat. You can even use a grilled pan if you do not have pizza stone like I did.
  2. Add 1 tbsp dry active yeast, 1 tsp sugar and 1 tsp of flour in a bowl.
  3. Pour 1/4 cup warm water(110 -115 F) into the bowl. I generally microwave the water for around 40 seconds at high pressure. Leave the mixture in a warm environment(about 10 min), till it forms the foam. The yeast is now ready.
  4. Take 2 cup whole wheat flour and 2 cup all purpose flour or maida. You can even use 4 cups of maida only.
  5. Sieve the flour in a mixing bowl. Add 1 tsp salt and 1 tsp sugar into it. Whisk the mixture so that there are no lumps.
  6. Take 1 cup of milk . Add the yeast mixture into flour mixture and knead it into a smooth dough with the milk. If you need to add more milk, add it with the increment of 1 tbsp.
  7. Add 1 tsp of oil and knead with your fingers into a smooth dough.
  8. Divide the dough into 2 halves. Leave each dough in a air tight container about 1 hour. The dough will rise to double.Now knead it again lightly and leave it for another 20 minutes.
  9. Make sure that the dough rises to double before you proceed to make the kulcha. You may leave the dough for more time to rise.
  10. The dough is now ready to be used.
  11. Mix all the ingredients for the stuffing with hand and divide it into 8 equal portions and keep aside.
  12. Make 8 equal balls from the first dough. Let it rest for 10 minutes.
  13. Roll each ball into a small circular shape disc on a lightly floured surface using a rolling pin. Add the filling mixture ball in the center .
  14. Bring all the sides of the disc together and twist it and seal it so that it form a ball. Let it rest for 10 minutes.
  15. Now roll the stuffed ball into circular shape on a lightly floured surface using your hands. You can also use a rolling pin but if you are baking it in oven, result is best obtained if you use your hand.
  16. Lightly brush some oil . Sprinkle some chilly powder and chopped coriander over it .
  17. Grease an aluminum foil . Place the kulcha on the foil , garnished side up. Put this on a circular pizza plate and slip it carefully into the pizza stone or the grilled pan in the preheated oven.
  18. What I do is , open the oven door, pull the lower rack(containing the heated pizza stone or the grilled pan) a little front and slip the kulcha along with the aluminum foil .
  19. Let it heat for around 6 minutes. As you look into the oven window, the kulcha will rise. The amount of time also depends on your oven type. So adjust accordingly.
  20. Take out the hot kulcha on a plate and serve it hot immediately with masala raita or curry.
