Ingredients Serving: 4

  1. 750 gms Sarson saag
  2. 250 gms Palak saag
  3. 250 gm Bathua saag
  4. 2 cups water with a pinch of salt
  5. 1 1/2 cup Makki atta
  6. 4 green Chilli
  7. 25 gm Ginger
  8. 2 Onions
  9. 6 cloves of Garlic
  10. 100 gm Ghee
  11. 1/2 tsp Red pepper powder
  12. 1/2 tsp Garam masala
  13. 1/2 tsp Coriander powder
  14. 1/2 kg Makki atta
  15. Water for kneading
  16. Ghee for frying

Instructions

  1. For the saag: Add the three saags, salt and water into pressure cooker and cook over low heat for 1 1/2 hours.
  2. Squeeze out saag and keep saag water aside. Mash saag in the cooker until coarsely ground, and add makki atta and stir.
  3. Put back saag water and a little fresh water and boil over low fire.
  4. Add green chillies, ginger and cook till the saag gets thick.
  5. For tadka, add chopped onions, ginger, garlic, red pepper powder; garam masala, dhania and saute until onions are light brown.
  6. Mix into saag and garnish with julienne of ginger fried in ghee.
  7. For makki ki roti: Knead the makki atta until it becomes a ball, add atta to dry it and knead well.
  8. Heat the tava and add a little ghee so that it does not stick.
  9. Make round shapes of makki roti on chakla and carefully transfer to the tava.
  10. Cook with ghee till golden brown.
