About Tahchin (Soffron rice with chicken) Recipe

Tahchin is a persian recipe.In this recipe rice mix with egg,saffron and whisked curd and make layer with masala cooked chicken and creat a golden crusted saffron rice

Tahchin (Soffron rice with chicken)

Ingredients to make Tahchin (Soffron rice with chicken)

  • 500 grm boneless chicken
  • 1 medium onion roughly chopped
  • 1 tsp termuric powder
  • 1 tsp black pepper powder
  • salt as per taste
  • 1/2 cup thick tomato paste
  • For rice, 2 cup rice
  • 1 egg
  • Few strings saffron soked in hot water and prepare
  • 1 cup plain whisked yogurt
  • salt to cook rice
  • oil for cooking
  • For Tempting, 1 tbsp butter
  • 2 tbsp dried pomegranate seeds
  • Some pumpkin seeds
  • Few raisins
  • Some chopped dry fruites
  • few rose petals for garnish

How to make Tahchin (Soffron rice with chicken)

  1. Wash and soaked the rice in water with salt for an hour
  2. Take chicken in a pot add onion, turmeric powder,black pepper powder,salt and tomato puree and add hot water.
  3. Now mix well cover and cook it on low medium flame till tender
  4. In a bowl add Edd and whisked it, add saffron water and whisked plain yogurt and whisked untill all well combined
  5. Now Boil water in a other vessel add soaked rice and add salt let it boil over high heat
  6. When rice half cooked drain warm water and keep the rice in strainer
  7. Now transfer the rice in saffron mixture and mix gentaly
  8. Other side when chicken done cut it in optional size
  9. Now heat oil in deep pan ,now add half of saffron rice in it and push it gentaly
  10. Now arrange chopped chicken pieces in centre and again keep remaining rice and push it
  11. Now cover the lid and cook for 5 to 8 minutes untill start to steam
  12. Once steam comes , reduced the heat to low and cook for 20 to 25 minutes
  13. Once rice cooked flip it carefully on a plate, to get golden crust rice outside
  14. For Tempting,heat the butter in a pan add dry pomegranate and pumpkin seeds and with few raisins and pour over the top of cooked golden rice
  15. Garnish with dry fruits and rose petals
  16. Now a Persian recipe Tahchin is ready to serve

My Tip:

They use barberry for tempting but i use dry pommegrante,pumpkin seeds and raisins becouse i did't have that.
