ABOUT Baked Marvel (Baked vegetables with kalari) RECIPE

Kalari : fresh Mozzarella cheese of hilly areas of Udhampur district of J&K. Kalaris are made from raw (uncooked) full fat milk that is separated using soured milk. The solidified part is placed in doonas (small bowls made of leaves) and sun dried. The excess liquid drips down from the semi-porous doonas and rest of the moisture is lost by sun drying. As the ambient temperature is low and the sun is strong in the mountains, the Kalari becomes dry from outside yet retains moisture from inside. Some times fungus grows on this and gives it a unique flavour.

Ingredients Serving: 2

  1. Peas 1/4 cup
  2. Carrot diced 1/4 cup
  3. Beans diced 1/4 cup
  4. Onion diced 1/4 cup
  5. Potato diced 1/4 cup
  6. Garlic 4 minced well
  7. Oats 2 tbsp
  8. Kalari grated 1
  9. Olive oil 1 tbsp
  10. Milk 3/4 cup
  11. Salt 3/4 tsp or as per taste
  12. Pepper 1/2 tsp
  13. Oregano 1/4 tsp

Instructions

  1. Boil vegetables till semi soft. Keep aside
  2. Heat oil in a pan.Add garlic stir for a moment and add onion and saute it for 2 minutes.
  3. Mix oats in cold milk and add in the onion mixture. Stir well till it boils and mixture becomes thick.
  4. Add salt, pepper and oregano.
  5. Take a microsafe dish. Layer boiled vegetables, then white sauce and grated kalari. Sprinkle oregano.
  6. Repeat layers if quantity is more.
  7. Bake for 10 min on micro mode or 20 minutes in oven at 170 degree centigrade till the top is golden brown.
  8. Serve hot. (avoid heating again and again)
