Chole bhature a dish from the Punjabi cuisine is a combination of chana masala and bhtura of fried bread made from Maida flour

Ingredients Serving: 2

  1. One cup soaked overnight chickpeas
  2. Half tablespoon cumin seed
  3. 1 chopped onion
  4. One tomato
  5. Half teaspoon onion paste
  6. Half teaspoon coriander powder
  7. Salt to taste
  8. 4-5 cloves
  9. 1 tsp Garam masala powder
  10. 1/4 tsp turmeric powder
  11. 1 tsp chana Masala powder
  12. For bhatura
  13. 2 cup maida
  14. 2 tsp oil
  15. 4 tsp curd
  16. 1 tsp sugar
  17. 1/4 tsp baking powder
  18. Oil for deep frying
  19. Salt to taste
  20. Water as required

Instructions

  1. For chhole Soak chickpes in the water overnight .then put in the pressure cooker with salt and 1 teabag. Cook the chickpea for 15 minutes
  2. Meanwhile put a pan on medium flat and heat a little oil on it add the cumin seeds ,curry leaves and half sliced onion in the pan. saute onion till golden brown then add minced garlic ,ginger and onion paste .saute the ingredients for a few seconds until the raw smell of Garlic goes away and then add the chopped tomato with tomato puree.
  3. Once the oil is separated add turmeric, red chilli powder, coriander powder and chana masala .cook tomato- onion mixture for another 2 minutes and then add cooked Chola with little water .Stir well to mix the masala with chhola .check salt and allow it to cook for a few minutes. The chhola is prepared ,you can garnish with chopped onion and coriander leaves.
  4. for bhtura : Sieve maida in large bowl. Add sugar ,salt, yogurt, baking powder and 2 tbsp oil and mix well
  5. Slowly add water in small quantity and knead smooth and soft dough
  6. Cover it with cloth and place it in warm place for about 3-4 hours after few hours you will not is it increase size again knead it until smooth.
  7. Take one ball press it and roll out in a circular shaped like Puri
  8. Hit oil in a deep frying pan over medium heat .to check whether oil is hot enough for deep frying drop a small piece of Dough in it and if it comes to the surface immediately without changing its colour then oil is sufficiently hot now place one rolled out row bhature in it .after 5-7seconds gently press it in the centre with perforated spoon to puff up.
  9. When bottom side is light golden brown turn it gently and deep fry from another side until light golden brown make sure that you are deep frying on medium heat. when ready, take it out from Oil with the help of perforated spoon and drain excess oil
  10. Transfer it into a plate .fry remaining bhatura in same way .serve with Chole masala.
