ABOUT Panchmel Dal Kofta Curry RECIPE

Panchmel Dal Kofta Curry or Pancharatna Dal Kofta Curry is a delicious gravy made by using panchmel dal or pancharatna dal. Panchmel dal curry is an integral part of Rajasthani cuisine. Panchmel dal is a mix of five dals, that is, chana dal, masoor dal, tuar dal, urad dal and moong dal. It is a nutritious and tasty curry.

Ingredients Serving: 6

  1. For making Panchmel Dal Kofta Balls:
  2. Panchmel Dal or Pancharatna Dal 1 cup
  3. Onion (finely chopped) 1
  4. Ginger garlic paste 1 tsp
  5. Red chili powder 1 and 1/2 tsp
  6. Turmeric powder 1/4 tsp
  7. Salt as required
  8. Vegetable oil for deep frying
  9. For making the curry (gravy):
  10. Butter 25 g
  11. Almonds 12
  12. Onion (big, roughly chopped) 3
  13. Tomatoes (Big, roughly chopped) 3
  14. Ginger garlic paste 1 tbsp
  15. Green chili 1
  16. vegetable oil 2 tbsp
  17. Cloves 3
  18. Cardamom 2
  19. Cinnamon 1 inch piece
  20. Cumin 1/2 tsp
  21. Red chili powder 2 tsp
  22. Coriander powder 2 tsp
  23. Turmeric powder 1/4 tsp
  24. Salt as required
  25. Water 2 and 1/2 cups
  26. Kasuri methi (dried fenugreek leaves) 1 tsp
  27. Garam masala powder 1 tsp
  28. Fresh cream 1/2 cup
  29. Chopped Coriander leaves 2 tbsp

Instructions

  1. Soak panchmel dal in about 3 cups water for at least 4-5 hours.
  2. Meanwhile prepare the curry.
  3. For that, melt butter in a pan.
  4. Add the almonds and fry them until they start to change their color.
  5. Next add the onions, ginger garlic and green chilies and saute them until they turn soft and the raw smell goes off.
  6. Then add the tomatoes and little salt, and saute until the tomatoes turn soft.
  7. Once done, switch the flame off, and allow to cool down completely.
  8. Once it cools down, grind it without adding water to form a thick and smooth paste.
  9. Next, heat vegetable oil in a pan.
  10. And add cloves, cinnamon, cardamom and cumin and saute for few seconds.
  11. Then add the ground curry paste.
  12. Saute for 2 minutes.
  13. Next add turmeric powder, red chili powder and coriander powder.
  14. Saute for about 8-10 minutes, stirring in between.
  15. Next add water and salt and mix well.
  16. Allow to boil for 2 minutes.
  17. Then add kasuri methi and garam masala powder.
  18. Cook for 2 minutes.
  19. Then add fresh cream and mix well.
  20. Cook for 2 minutes.
  21. Switch the flame off and proceed to make the panchmel dal kofta balls.
  22. For this wash the soaked dal and allow to drain water.
  23. Grind it without adding water to form a coarse paste.
  24. Transfer it to a bowl.
  25. Then add the finely chopped onions, ginger garlic paste, red chili powder, turmeric powder and salt.
  26. Mix well.
  27. Heat oil in a pan.
  28. Make medium sized balls out of the ground mixture and drop carefully into hot oil.
  29. Cook on medium flame until they turn light golden brown.
  30. Allow to cool down a bit.
  31. Drop the panchmel dal kofta balls into the curry and cook for 2-3 minutes.
  32. Alternately you may pour the cooled gravy on top of the panchmel dal kofta balls.
  33. Garnish with fresh cream and chopped coriander leaves.
  34. Serve with rice or roti.
