Ingredients Serving: 2

  1. For Tamatar ka kut
  2. 2 cups chopped tomatoes
  3. 1/4 cup peanuts
  4. 1/4 cup dry desiccated coconut
  5. 1 tbsp roasted sesame seeds
  6. 1 tsp red chilli powder
  7. 1 tsp cumin seeds powder
  8. 1 tsp coriander powder
  9. 1/2 tsp turmeric powder
  10. 1 tbsp ginger garlic paste
  11. 1 tsp sugar
  12. Salt to taste
  13. Oil
  14. For tempering
  15. Oil
  16. 1/2 tsp mustard seeds
  17. 1/2 tsp cumin seeds
  18. 1 tsp cloves and black pepper
  19. Curry leaves
  20. For palak bidari paratha
  21. 1 cup maida
  22. 1/2 cup wheat flour
  23. 1/2 cup semolina
  24. Salt to taste
  25. 1 tbsp ghee + for cooking

Instructions

  1. For Tamatar ka kut
  2. In a kadai roast the peanuts , sesame seeds and coconut till they turn little brown
  3. Switch off the gas and keep aside
  4. Once cool grind the mixture into fine powder
  5. In another kadai add the tomatoes and all the dry spices with little water
  6. Let it cook on low flame
  7. Stir
  8. After 10 minutes switch off the flame
  9. Let the mixture cool down
  10. Once cool blend the tomato mixture into fine puree

  12. Again transfer the mixture into the kadai cook for 2 minutes and add little water
  13. Mix well
  14. For tempering Heat oil add mustard seeds ,cumin seeds ,black pepper ,cloves and curry leaves

  16. Pour the above tempering on the tomato mixture before serving
  17. Ready
  18. For parathas
  19. Knead a dough by mixing all the ingredients together

  21. Rest for 10 minutes

  23. Now take small portion roll a normal chapati
  24. See image
  25. Apply little ghee on it and spread evenly
  26. See image
  27. Now start making alternate folds of the chapati
  28. Fan like..
  29. Roll it round completely
  30. Press down the ends firmly
  31. See image
  32. Again roll it into a paratha
  33. Cook on tawa by applying ghee on both the sides

  35. Serve hot with tamatar ka kut
