About Shami kebabs Recipe

Awadhi recipes are a part of hyderabadi cuisine. Not only biryani is famous but also kebabs. The nuicy mutton mince is cooked with channa and processed into melt in mouth kebabs.

Shami kebabs

Ingredients to make Shami kebabs

  • Minced mutton 500 gms
  • Channa dal 1/2 cup
  • Fried onions 1/2 cup
  • Redchillies 2
  • green chillies 2
  • ginger 1 inch
  • garlic 5-6 pods
  • cloves 4
  • cinnamon 2 sticks
  • cardamom 2
  • jeera 1/2 teaspoon
  • fennel seeds 1/2 teaspoon
  • Black pepper 1 teaspoon
  • coriander leaves 1 fistful
  • salt accordingly
  • egg 1
  • oil for frying

How to make Shami kebabs

  1. Soak channa dal in water for an hour and drain the water.
  2. In a pressure cooker add 1 tablespoon oil and saute minced mutton, soaked channa dal,whole,spices, chillies,ginger, garlic and adequate salt.
  3. Then pressure cook for 5 whistles with 1 cup of water.
  4. Release pressure and cook till all the water dries up.
  5. Cool and grind along with fried onions(optional).
  6. Add 1 egg and finely chopped coriander leaves and mix well.
  7. Refrigerate for half an hour to get a firm mix.
  8. Roll into lemon sized balls and flatten them into kebabs
  9. Shallow fry in tawa and serve with Onion slices, lemon wedges,mint+curd chutney or tomato sauce.
  10. Mutton shami kebabs are good accompaniment for rotis,biryani or rice

My Tip:

Vegetable,chicken and fish kebabs can be made similarly but pressure cooking may not be needed
