About Tomato Barfi Recipe

Easy, surprisingly yummy and sugar free

Tomato Barfi

Ingredients to make Tomato Barfi

  • 3 large ripe tomatoes
  • 300 gm finely grated fresh coconut
  • 150 gm fresh mava
  • 2 tablespoon ghee for cooking +1 teaspoon for greasing
  • 6-8 pistachios/almonds slivered fine
  • Edible Silver leaf/Vark if needed

How to make Tomato Barfi

  1. Wash and purée the tomatoes well in a blender without adding any water
  2. Melt ghee in a saucepan and pour in the tomato purée
  3. Stir for 4-5 minutes on medium heat
  4. Add finely grated coconut and mix well
  5. Keep stirring until the mix comes together
  6. Then add the mava after crumbling or mashing it a bit
  7. Mix well. The mix will be slightly liquidy after adding mava
  8. Mix and keep stirring till the mixture thickens to halwa/any barfi mix consistency
  9. Take of heat
  10. Grease a tray or plate with ghee and spread the mixture evenly starting with one corner
  11. Sprinkle slivered pistachios and vark (optional)
  12. Let cool and cut into desired shaped pieces
  13. Refrigerate the leftovers air tight

My Tip:

It wouldn’t taste of tomatoes!! Enjoy!
