About Machha ambila Recipe

Ambila is a very popular Odia recipe. Machha ambila can be described as fish cooked in a light sweet-soury-tangy gravy. The combination of tamarind and jaggery gives the gravy an amazing flavour. It can be prepared in this same way using only vegetables too. Ambila is traditionally served with plain rice.

Ingredients to make Machha ambila

  • Rohu fish pieces 4
  • onion 1 chopped
  • Green chilli 2-3 chopped
  • Panch phoron 1 tsp
  • curry leaves 1spring
  • Dry red chilli 1-2
  • hing 1/4 tsp
  • ginger garlic paste 1tsp (optional)
  • turmeric powder 1 tsp
  • chilli powder 1/2tsp(or as needed)
  • Few Tarmarinds soaked in hot water
  • jaggery/sugar 4tbsp or as per the taste
  • salt as per taste
  • Coriander leaves chopped for garnishing
  • mustard oil 2tbsp

How to make Machha ambila

  1. RUB WELL WITH FINGERS.
  2. SOAK FEW TARMARIND PIECES IN HOT WATER AND SET ASIDE.
  3. HEAT 2TBSP MUSTARD OIL IN A PAN AND WHEN HOT ADD 1TSP PANCH PHORON.
  4. ADD FEW CURRY LEAVES AND DRY RED CHILLI.
  5. ADD ONE ROUGHLY CHOPPED ONION,
  6. 2CHOPPED GREEN CHILLI.
  7. SAUTE TILL ONION BECOMES TENDER.
  8. ADD 1TSP GINGER GARLIC PASTE,
  9. 1/2TSP TURMERIC POWDER, 1/2TSP RED CHILLI POWDER,
  10. SALT TO TASTE,
  11. ADD THE MARINATED FISH PIECES.
  12. MIX CAREFULLY WITH THE SPICES.
  13. FRY EACH SIDE OF THE FISH PIECES FOR 2MINS IN MEDIUM FLAME.
  14. FLIP PIECES IN BETWEEN.
  15. NOW MASH THE TARMARIND PIECES.
  16. STRAIN IT.
  17. ADD 1CUP TARMARIND WATER,
  18. AND 1CUP WATER.
  19. COOK ON HIGH TILL ONE BOIL COMES.
  20. THEN ADD JAGGERY/SUGAR AND COOK FOR 4-5MINS OR TILL JAGGERY MELTS.
  21. ADJUST SPICES AS PER YOUR TASTE. THEN ADD CHOPPED CORIANDER LEAVES AND SWITCH OFF.
