About Watermelon gazpacho Recipe

Gazpacho is a cold soup and the watermelon gazpacho is a recipe most apt for the summer. the watermelon adds a bit of sweetness opposed to the fury heat from the chiliies too.

Watermelon gazpacho

Ingredients to make Watermelon gazpacho

  • 2 cups watermelon ( keep chilled) cubed and deseeded
  • 1 tomato
  • 1 celery stalk ( can omit)
  • 1 long english cucumber
  • 1/2 inch ginger
  • 1 small chilli ( i have used a small nagabon)
  • juice of 1 lime
  • handful basil leaves
  • salt and pepper to taste
  • chopped avocado, spring onions chillies and cucumber for garnish

How to make Watermelon gazpacho

  1. Blend all the ingredients except the salt, pepper and the garnish into a smooth soup.
  2. Ladle this smooth soup into the bowls and top with salt and pepper
  3. Add in the garnish and serve chilled

My Tip:

If keeping for a longer time remember to keep refrigerated without any salt and pepper
