ABOUT Corn, Mushroom Methi Masala In a Creamy Gravy RECIPE

Corn is combined with fresh fenugreek leaves, mushrooms with cream and selected spices to make a delicious vegetarian curry. Corn, Mushroom, Methi Masala is a very easy to make and can be served with roti, chapati, paratha or rice.

Ingredients Serving: 5

  1. Fresh methi leaves/ Fenugreek leaves- 1/2 cup (chopped)
  2. Palak (Spinach)- (blanch and pure)- 1/2 cup
  3. Mushroom- 1/2 cup (chopped)
  4. Corn 1/2 cop (boiled till soft)
  5. Fresh Cream 2 tbsp
  6. Yogurt 2 tbsp
  7. Green chilli- 1
  8. Garlic paste- 3-4 cloves
  9. Coriander powder - 2 tsp
  10. Turmeric powder - 1/2 tsp
  11. Red Chilli powder - 1 tsp
  12. Sugar- 1 tsp
  13. Oil- 4-5 tbsp
  14. Salt to taste

Instructions

  1. Heat oil in a pan. When the oil is hot, add the cumin seeds, chopped garlic and green chilli. Fry it for 10 seconds.
  2. Add the methi (finely chopped) and saute it for a minute. After that add the fresh cream, yogurt and mix it well.
  3. Now add all the spices, red chili powder, turmeric powder, coriander powder, sugar, and salt. Saute it for 2-3 mins.
  4. Add the mushroom and corn (note: at this stage you can add a little extra water or milk if the gravy is too thick. )
  5. Simmer and cook for 10-12 mins till the mushroom is cooked well.
  6. Serve it warm with roti or rice.
