Ingredients Serving: 4

  1. Medium sized potatoes 5 ( boiled and coarsely mashed )
  2. Bread crumbs (optional )
  3. Few curry leaves
  4. Garlic 8-10 cloves
  5. Ginger 1 tbsp
  6. Green chillies 4
  7. Coriander leaves 2-3 tbsp
  8. Mustard seeds 1/2 tsp
  9. Oil 1 and 1/2 tbsp
  10. Gram flour 1 and 1/2 cup
  11. Turmeric powder 1 pinch
  12. Asafoetida 1 pinch
  13. Salt to taste
  14. Baking soda 1 pinch
  15. Cornflour 1 tbsp
  16. Chilly powder 1/2 tsp
  17. Pav bread 5-6
  18. Coriander mint chutney
  19. Spicy garlic chutney

Instructions

  1. Grind the ginger, garlic and chillies to form a coarse paste.
  2. Heat oil in a pan, add the mustard seeds and let them crackle.
  3. Add asafoetida, curry leaves, ginger-garlic paste, mashed potatoes, turmeric, salt and coriander leaves. Mix everything well and cook it for some more time.
  4. Remove the potato filling in a different bowl and let it cool.
  5. Heat oil in a pan .
  6. Mix the gram flour, corn flour, turmeric powder, chilly powder, asafoetida, salt, water, baking soda and 1 tbsp oil in a bowl. Mix it well and make a smooth paste .
  7. Deep fry these potato balls coated with the gram flour batter till it turns golden brown in colour.
  8. Cut the pav into two halves, add the mint chutney and garlic chutney on both sides of the pav. Place the bat at a vadap in the centre of the pav and close it.
  9. Serve it hot with some more chutney and fried green chillies.
