I try this delicious recipe with watermelon peel.. I tun this in to a sweet dish.. As It luks in fruit shape but it is a desert.. My inovation..

Watermelon Barfi (from its peel)

Ingredients to make Watermelon Barfi (from its peel)

  • Watermelon 2kg
  • Desi ghee 2tsp
  • sugar 4-5tsp
  • Green cardamon powder 1/2tsp
  • mawa/khoya 150gm
  • coconut powder 1/2cup
  • almond and kaju powder 1/2cup
  • Red food color 1tsp
  • Green food color 1tsp
  • Vanila assence 5-6 drops

How to make Watermelon Barfi (from its peel)

  1. Cut watermelon and take its peel white part only
  2. Now chop the white part of peel roughly
  3. Make its paste in mixer
  4. Now get other ingridient ready
  5. Take a pan /wok heat two tsp desi ghee and add watermelon peel paste and sute it till it gets dry
  6. Afterwhen it gets dry add coconut powder and cardemon powder vanila assence and mix now add sugar and mawa one by one and sute it for more five min.. Stir continuesly..
  7. Now it gets thicken and remove the pan
  8. Take it down and take it in a plate and divide the whole better into three parts.. In proportion of 60+20+20
  9. Now add red food color to bigger part that is 60 and green color in smaler one part one part remains white as in pic..
  10. Now grease a plate and aplly outer layer with green first the second layer with white and in the middle qith red color dough
  11. And garnish with watermelon seed as it lujs like watermelon slice and keep it in fridge for cooldown and set. .for one hour
  12. Now mark it with a knife as slice it and serve... It..when it is totally get its shape..

My Tip:

U can use choco chip as seeds.. Or can adjust the sugar as per ur taste..
