ABOUT Amba khatta RECIPE

It's a tasty traditional recipe of Odisha. In this recipe raw mango is cooked with mustard paste. Jaggery /sugar is added for the sweetness. It's prepared without onion, garlic and ginger. One can have it at the time of fast too.

Ingredients Serving: 3

  1. Large raw mango 1
  2. Yellow mustard seeds 2tsp
  3. Cumin seeds 1tsp
  4. Jaggery /sugar as per your taste
  5. Curry leaves 1spring
  6. Dry red chilli 1-2
  7. Turmeric powder 1/4tsp
  8. Panch phoron 1/2tsp
  9. Salt 1/2tsp
  10. Mustard oil 2tsp
  11. Roasted cumin-red chilli powder 1tsp

Instructions

  1. Wash, peel and chop the mango in long pieces. Discard the seed.
  2. Soak mustard seeds and cumin seeds for 10mins and grind to a smooth paste with little water.
  3. Heat mustard oil in a pan, when hot add panch phoron, dry red chilli, curry leaves and chopped mangoes. Stir.
  4. Add salt and turmeric powder. Mix and stir till tender.
  5. Add the mustard paste and 1cup water. Mix well. Bring to a boil. Simmer, then cover and cook till it thickens.
  6. Add jaggery /sugar and cook for 3-4mins till all mix well.
  7. Now sprinkle roasted cumin-dry red chilli powder and switch off.
  8. Serve hot or cold as per your choice.
