Meri in Punjab or breakfast with meri in Rajasthan, is very delicious and a yummy dish in hot summers.During the famous Naagpanchami festival, it is one of the dishes in puja offering.

Ingredients Serving: 4

  1. Rice 1/2 cup
  2. Buttermilk 2 cups (sour)
  3. Fenugreek seeds 1/4 tsp
  4. Mustard seeds (rai) 1 tsp
  5. Ginger 1 tsp (grated)
  6. Zeera 1/4 tsp
  7. Turmeric 1/2 tsp
  8. Red chilli powder 1/4 tsp
  9. Zeera powder 1/4 tsp
  10. Water 2 cups
  11. Green chillies diced 1
  12. Refined oil 2 tbsp (traditional recipe uses mustard oil)

Instructions

  1. Pressure cook the rice using 2 cups water till 4 whistles blow. The cooked rice needs to be mushy.
  2. In a deep pan, heat oil and add the fenugreek seeds, fry till it turns dark brown.
  3. Add the mustard seeds, stir for 30 seconds and add the ginger, turmeric, red chilli powder and stir it well.
  4. Add rice to the above mixture and mix well. Now pour the buttermilk into the rice mixture and keep stirring. Add salt.
  5. Boil it well for 10 mins and remove from the heat.
  6. Sprinkle cumin powder and some green coriander and serve it hot or cold.
