ABOUT Ripe_Mango_Khandvi RECIPE

Khandvi, also known as Suralichi Vadi, Patuli / Dahivadi. It is a savory snack in Gujarati cuisine and in Maharastrian cuisine also. It is yellowish, tightly rolled bite-sized pieces and is primarily made of gram flour and yogurt. My Fusion: I have added ripe mango puree to it and change the flavor.

Ingredients Serving: 5

  1. Gram flour (besan) 1 Cup
  2. Curd (Yogurt) 1 Cup
  3. Mango Puree 1 Cup
  4. Red chilli powder 1 tsp
  5. Salt, to taste.
  6. Cooking oil 1/2 tablespoon
  7. Mustard seeds 1 teaspoon
  8. Sesame seeds 1 teaspoon
  9. shredded coconut 2 1 tablespoon
  10. Asafoetida (hing), a pinch
  11. Sprinkles, Mint Leaves (for garnishing)

Instructions

  1. Mix all the ingredients required for khandvi in a mixing bowl using a whisk to form a smooth batter.
  2. Rest it for about 10-15 minutes. After this cook it in a non-stick pan or heavy bottom pan and stir constantly so that no lumps are formed. Cook it till it becomes really thick and soft.
  3. Once it is very thick, take a test by pouring the mixture. If it falls immediately (or having running consistency then it’s not done. Cook for another-3 minutes.
  4. Once the batter is ready, Take a foil paper and spread khandvi on it or on the greased inverted Thali / kitchen counter. Spread into a thin layer using a palette knife.
  5. Once it is cool, cut it into strips and roll them tightly. When they splutter, pour it over the Mango flavored khandvi. Garnish it with chopped Sprinkles/cilantro/ Mint and grated coconut.
  6. Heat 1 tablespoon of oil in a pan and add mustard seeds, sesame seeds, green chilies and asafoetida.
  7. Serve Mango flavored khandvi mint / tamarind Chutney or enjoy it as a morning /evening snack with hot Tea.
