ABOUT Tender coconut-mango-figs Greek yoghurt RECIPE

Figs infused in tender coconut water, folded in Low fat greek yoghurt sweetened with honey,layered with mangoes is a guilt free dessert you wouldn't mind eating any time of the day!

Ingredients Serving: 2

  1. 8 dry figs
  2. 1 cup tender coconut water
  3. 1 tbsp chia seeds
  4. 2 cups low fat thick yoghurt/store bought unflavoured greek yoghurt
  5. 1 ripe sweet mango, i used Alphonso
  6. 1 tbsp honey
  7. Few chopped nuts, i used pine nuts and pista
  8. A Pinch or 2 cinnamon powder

Instructions

  1. Soak figs and chia seeds in tender coconut water overnight in the fridge, Next day mash it slightly with your fingers. Mushy not paste.
  2. If you are making greek yoghurt at home, hang yughurt in muslin clothes in cool place or in refrigerator until all the water is drained. Add honey and gently remove the lumps with a spoon/fork.
  3. Fold in figs chia seeds mixture, along with cinnamon powder.
  4. Layer a Mason jar or bowl with finely chopped mango pieces, pour greek yoghurt mixture, on top put some more mango pieces, and chopped nuts, Sprinkle some cinnamon powder. Chill it well and serve this mildly coconuty flavoured healthy dessert.
