About Chicken with Black Sesame Paste Recipe

There are a myriad of delicious recipies for cooking chicken in Assam. The elaborate use of various vegetables and pulses makes every chicken recipe distinct from the other. However, if you happen to visit Assam and you are left with no choice but to choose just one single chicken dish, then I would definitely recommend Chicken with Black Sesame seeds

Chicken with Black Sesame Paste

Ingredients to make Chicken with Black Sesame Paste

  • 500 g chicken curry-cut pieces
  • 100gms black sesame seeds lightly toasted
  • ½ tbsp. black pepper powder
  • 2 big onion finely chopped
  • 2 tsp ginger finely chopped
  • 15-20 cloves garlic finely chopped
  • 8-9 green chili slit
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 2 tbsp lemon juice
  • 3 tbsp mustard oil
  • 2 tbsp SPRIGToasted Sesame oil
  • salt to taste

How to make Chicken with Black Sesame Paste

  1. Make a smooth paste of black sesame seeds and half tbsp garlic with very little water.
  2. Heat oil to smoking point. Temper it ginger, garlic and onions, sauté till the onion is golden brown.
  3. Add the chicken, turmeric powder, cumin powder, cook over a medium flame till the chicken is more than 80% cooked. If required, add warm water, just enough to scrape off the masalas from the bottom of the wok.
  4. In a separate pan, heated some toasted sesame oil, and sauté the sesame garlic paste and green chillies for 3 to 5 odd mins. Add half a cup of warm water and bring the curry to boil.
  5. Add the sautéed paste and black pepper to the chicken curry and cook till the chicken is tender, another 3 minutes or so
  6. Add lime juice, stir well for a min. Adjust seasonings. Serve hot with rice.

My Tip:

Toast the sesame seeds slightly and then soak in water for sometime (30mins aporox) and then make the paste to avoid bitterness
