Muffins are always in demand , and makes for a quick snack to go with coffee/tea. Healthy muffins can be a great breakfast snack too. These muffins are kid friendly, easily adaptable, impressive and quick to bake. There are so many-things you can do to bake a power packed nutrition laden healthy muffin. It does seem like a tall order, but with careful choice of ingredients, the calories can be greatly reduced with no compromise on taste.

Ingredients Serving: 7

  1. 1 cup multigrain flour
  2. ¾ cup all-purpose flour
  3. 1 1/2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp cinnamon powder
  6. 1/4 tsp salt
  7. 2/3 cup packed brown sugar
  8. 1 cup ripe mashed bananas
  9. 1 cup whisked yogurt and about a cup of buttermilk to adjust batter consistency if needed .
  10. 1 cup wheat bran
  11. 1/4 cup olive oil or any
  12. 1 tsp vanilla extract
  13. 1/4 cup golden raisins
  14. 1/3 cup mixed melon seeds and chopped nuts.

Instructions

  1. Preheat oven to 200 degrees C. Grease or line 12 muffin cups .
  2. Whisk yogurt, buttermilk and brown sugar in a medium bowl until smooth.
  3. Puree the bananas and ,whisk in the puree, wheat bran, oil and vanilla.
  4. Take another bowl, whisk both flours , baking powder, baking soda, cinnamon and salt .
  5. Make a well in the dry ingredients; add the wet ingredients and stir with a rubber spatula until just combined.
  6. Stir in golden raisins. Add some nuts and seeds .The batter will look thick, dont mix too much.
  7. Spoon the batter into the prepared muffin cups..
  8. Sprinkle with broken walnuts, almonds and some remaining seeds on the top. Bake the muffins until golden brown and spring back when touched lightly.Baking timers varies from 20 to 25 minutes.
  9. Let cool in the pan for 10 minutes. Run a knife around the edges to loosen and turn muffins out onto a wire rack to cool slightly before serving.
