Ingredients to make MALPUA

  • maida(plain flour) 8tbsp
  • 4tbsp semolina(suji)
  • 1/3cup suger
  • 1/2 cup water
  • 1/2 cup milk(approx)
  • 1/2tsp saunf-crushed
  • 1/4tsp elaichi powder
  • 2big pinches baking powder
  • Oil/ghee for shallow frying
  • For syrup
  • 1,1/4 cups suger
  • 1cup water
  • A few strands of saffron

How to make MALPUA

  1. Make a suger syrup by boiling 1/3cup suger and 1/2cup water.simmer on low heat for 2minutes till suger dissolves.remove from fire keep aside.
  2. Mix maida and suji.add hot suger syrup abd mix well.add milk gradually,adding enough to get a smooth better which is of a thick pouring consistency and which coats the back of a spoon.add elaichi and saunf.add baking powder and mix.
  3. For making syrup,boil suger,water and kesar.simmer for 4-5minutes to make a syrup of sticky consistency.remove from heat and keep aside to cool down to room temperature.
  4. In a frying pan heat oil/ghee about 1/2 height.if the oil/ghee is too much,puas with start floating.let the oil be medium hot.
  5. Pour about half of a big laddle of better in thr ghee.let it spread on its own.fry on medium heat till golden brown at the edges.then turnwith a chimta and reduce heat.fry till golden brown on both sides and edges acquire a rich brown colour.
  6. Remove from oil/ghee and put it in the syrup for 1-2 minutes,turning side to coat both sides.remove syrup and serve with rabri if you like.
