When the urge to have a fruity pudding or dessert hits you and you are pressed for time this is definitely a dessert worth trying.The ingredients are simple,method is easy and you can have it as sweet or add as much melted butter you want as per your individual taste.

Ingredients Serving: 5

  1. 3/4 cup of pineapple chunks cut fine.
  2. . 1/3/4 cup of roasted semolina
  3. . 1 1/4 cup of sugar
  4. 1 cup melted clarified butter ( ghee)
  5. 1/4 tsp saffron strands dissolved in 2 tbsp of warm milk.
  6. 12 pieces of cashew nuts and some raisins for garnishing.
  7. pinch of cardamon powder

Instructions

  1. Keep four cups of hot boiling water ready aside. Dissolve 1 cup of sugar in 1/2 cup of water.
  2. Add the finely chopped pineapple bits in the sugar water and cook . It will take around 5 to 8 minutes to cook soft.
  3. In 2 tbsp of ghee roast the cashew nuts and raisins till lightly golden.
  4. Take it out and keep aside. Roast the semolina in the same pan with little ghee till it turns golden and should take around 5 minutes and will emanate a roasted fragrance.
  5. Once the semolina is roasted well add the four cups of boiling water and let it cook on a medium flame without stirring it.
  6. After 3 minutes it will get cooked ,then stir the semolina and see no lumps are formed..Add the remaining sugar, cooked pineapple and the sugar syrup in which the pineapple cooked. Keep stirring and add the ghee slowly as you stir and the r
  7. After adding all the ghee and when the pudding looks cooked well and smooth , take it off the gas stove and spread on a greased plate or a small pan.. Let it cool. This can be served warm or chilled.
