About No oven Flourless eggless dry fruits cake Recipe

For a person like me , sweet cravings are so common . On top of that opting healthy version desserts / sweets sounds frustrating . Homemade easy bakes comes to my rescue . One such healthy break is this flourless Oats incorporated no sweetener used , dry fruits cake . To add flavour and softness , I have added a banana in this recipe . No baking powder or baking soda is used . The cake was unbelievably soft , moist and yummy .

Ingredients to make No oven Flourless eggless dry fruits cake

  • Rolled oats 120 grams coarsely powdered
  • Overripe bananas big 2
  • almonds sliced or chopped 1/4 cup
  • pistachios chopped 1/4 cup
  • Black raisins 1/2 cup ( adjust as per the sweetness )
  • butter 50 grams
  • Vegetable oil for greasing the cake tin .
  • salt a pinch
  • cinnamon powder 1/4 teaspoon
  • Vanilla extract 1/2 teaspoon

How to make No oven Flourless eggless dry fruits cake

  1. First coarsely grind oats and keep aside .
  2. Preheat idli cooker in low flame for 15 minutes .
  3. Oats , cinnamon powder are mixed and kept as dry ingredients in a bowl .
  4. In another bowl , add room temperature butter . Whisk .
  5. Add the mashed bananas to the butter and whisk gently .
  6. Now add the dry ingredients ( oats cinnamon mixture ) to the butter banana wet mixture .
  7. Add vanilla extract .
  8. Add 1/2 of the chopped nuts . Reserve the other half .
  9. Mix gently in one direction and gently . Mix only once to get a stiff batter .
  10. In this measurement , extra liquid isn’t needed to form a stiff batter .
  11. Grease the cake / bread tin completely so that cake batter doesn’t stick to the bottom and sides .
  12. Using greased parchment paper is also fine .
  13. Now sprinkle the other 1/4 chopped dry fruits in the tin . Spread throughout the tin .
  14. Pour the cake batter into the cake tin . Level the surface . Add the remaining nuts on top .
  15. Tap the tin down once so that there will be no space for air bubbles.
  16. Put the cake tin immediately into the preheated oven / cooker .
  17. If using cooker , use a bed of salt to preheat the cooker .
  18. Place a wire tray on the salt bed.
  19. Now place the cake tin carefully into the cooker on the wire tray .
  20. Close the cooker without gasket .
  21. Bake for 30 to 40 minutes in medium heat .
  22. Keep checking in between after 20 minutes , to ensure cake’s status .
  23. Cake releasing awesome aroma is one sign that cake is baked .
  24. Check using a toothpick to confirm the cake is baked or not .
  25. Once baked , take the cake tin out of the cooker , allow the cake to cool .
  26. Tilt the completely cooled cake on a plate .
  27. Flourless eggless healthy dry fruits cake is ready .
  28. It tastes yum. Tried and tested recipe . Moist , melts in mouth .A great hit among children :relaxed:

My Tip:

Don’t keep the cake batter out for a long time. Make sure the cooker is preheated on the first place , so that while you process the rest , putting the cake batter in for baking becomes easy . Plan accordingly . Don’t forget to tap the cake batter once to let air bubbles escape .
