take a spring form pan .
powder the biscuits well , add 3 tsp melted butter or ghee, mix well with fingers so that well coated .
spread this mixture on the base of the spring form pan .
keep the pan in the fridge for 30 minutes till the biscuit base has set well .
meanwhile beat condensed milk , vanilla essence and cream cheese till smooth and well combined .
add the whipping cream and beat again for few seconds till stiff peaks are formed .
no remove the spring form pan , and add half of the vanilla cream mixture on the base, tap gently to allow to spread well .
take half of the strawberries and puree in blender .
add the strawberry puree into the vanilla cream mixture that is already spread on the base, take a fork and mix the puree with the vanilla cream mixture gently .
now pour remaining cream mixture on top of the strawberry puree
add some strawberry chunks with the remaining strawberries into the cream mixture .
add more strawberry puree on top .
freeze the spring form pan with the ice cream mixture for at least 8 hours .
prepare a strawberry compote with the remaining berries with the sugar mentioned in ingredients .
boil chopped strawberries with sugar in a pan till slightly sicky ..allow to cool .
while serving remove the ice cream cheesecake from the spring form pan ,
serve a slice of the cheesecake ice cream with the prepared strawberry compote .
