I’ve been privy to so many breads and buns, I had to bake these babies. The buns get their sweetness from honey and dates and softness from milk and a good few minutes of kneading of course. I left the buns in a muffin pan to prove, but you could leave them out on a baking tray if you wish. It’s the kind of thing you want to have for your breakfast, with a knob of butter and cup of coffee.

Mix lukewarm water, yeast, honey and milk in a bowl. Let it sit for 5 minutes.
Add melted butter and salt to flour. Make a well in the centre. Add the yeast mixture.
Begin kneading and knead until the dough is soft and elastic. With hand 10 minutes, by machine 7 minutes.
Now, chop the soaked dates into small chunks. Add them to the dough mixture and combine till homogenous.
Lift the dough and place it in a greased bowl. Cover the bowl with a tea towel and allow it to prove for 60 minutes. Grease a muffin pan with butter.
Deflate the dough and divide them into 6 equal portions. Rest the each portion into the greased muffin pan.
Cover with a tea towel and prove for 30 minutes. Preheat the oven to 200 C.
Give the buns a quick egg wash with the beaten eggs.
Bake for 25 minutes until golden brown and risen. Let it cool and then serve
