About Kashmiri dum aloo(No onion garlic) Recipe

This simple but delicious curry is made with baby potatoes in a yoghurt and kashmiri chilli powder based gravy.Made only with dry spices.

Ingredients to make Kashmiri dum aloo(No onion garlic)

  • Baby potatoes 12 to 15
  • mustard oil 1/2 cup
  • Full fat curd/yoghurt 6 tbsp
  • cumin seeds/shah jeera 1 tsp
  • Asafetida 1 pinch
  • Kashmiri red chilli powder 3 tsp
  • fennel powder 1 tsp
  • Dry ginger powder 1/2 tsp
  • coriander powder 1 tsp
  • salt
  • Cinbamon 1 inch
  • cloves 4
  • Black pepper 5
  • Black cardamom 1
  • Green cardamom 1

How to make Kashmiri dum aloo(No onion garlic)

  1. PREPARE PARBOILED POTATOES,BEATEN CURD AND ALL SPICES.
  2. TAKE 1/2 CUP MUSTARD OIL AND HEAT IT.ADD THE POTATOES ONE BY ONE AND FRY TILL GOLDEN BROWN.
  3. REMOVE FRIED POTATOES ON A KITCHEN PAPER.
  4. TAKE 3 TSP KASHMIRI CHILLI POWDER IN A BOWL AND ADD 2 TBSP WATER.
  5. MIX AND MAKE A PASTE.
  6. PRICK THE FRIED POTATOES WITH A FORK FROM ALL SIDES.
  7. REMOVE EXTRA OIL.KEEP 2 TBSP MUSTARD OIL AND ADD 1 TSP CUMIN SEEDS.ADD A PINCH OF ASAFETIDA.
  8. KEEP GAS ON SLOW AND ADD CHILLI PASTE.
  9. ADD 6 TBSP FULL FAT YOGHURT GRADUALLY AND STIR CONTINUOUSLY.
  10. ADD 1 TSP FENNEL POWDER.ADD A STICK OF CINNAMON,5 BLACK PEPPER,4 CLOVES,1 BLACK CARDAMOM AND 1 GREEN CARDAMOM.
  11. ADD 1 TSP CORIANDER POWDER AND 1/2 TSP DRY GINGER POWDER.
  12. ADD SALT TO TASTE.
  13. ADD THE POTATOES AND COVER.LET IT COOK ON SLOW GAS(DUM) FOR 7 TO 8 MINUTES.
