Traditional mixed vegetable recipe of Bengal.

Ingredients Serving: 4

  1. Brinjal - 100 gm
  2. Bitter Gourd - 100 gm
  3. Potato - 100 gm
  4. Green Plantain - 100 gm
  5. Drumstick - 2
  6. Green Chilli - 2 to 3, slit
  7. Bori/Urad Dal Dumplings dried under sunlight - 7 to 8 nos
  8. Ginger paste - 1 teaspoon
  9. Mustard Paste - 11/2 teaspoon
  10. Cumin powder - 2 teaspoon
  11. Radhuni - 1 teaspoon
  12. Green Chili - 2 to 3
  13. Milk – ½ cup
  14. Mustard oil - 2 to 3 tablespoon
  15. Ghee - 1 teaspoon
  16. Panch Phoron (contains fennel seeds, fenugreek, cumin, nigella seeds, radhuni) Coarse Powder - 1 teaspoon
  17. Dry Red Chilli - 1 or 2

Instructions

  1. Cut all the vegetables in elongated manner and make pieces of drumsticks.
  2. We use “Bori” in sukto. Bori is nothing but dumplings made of urad dal paste which is sun dried and used in curry after frying.
  3. Now heat oil in a pan and fry each vegetable separately with salt. After that, put all the fried vegetables together and add ginger paste, cumin powder, sugar and green chilli. Stir well, then add water and put it in pressure cooker for 1 whistle.
  4. Once the pressure is released, take oil in a pan and season with radhuni seeds or panch phoron & dry red chilli. Add mustard paste and sauté it. Now pour the boiled vegetable soup & fried dumplings into it and let it boil for 2 minutes.
  5. Then add milk and slower the flame, add fried bori. Switch off the gas and add ghee & panch phoron powder. Serve this curry with plain rice.
