About Falsa Sherbet n Falsa Kulfi Recipe

Falsa, a fruit like berries, has a unique tanginess and taste. Available in summers only and that too for a very short period. Its juice and kulfi are much preferred compared to other juices. Making it at home is also very simple. Involves no cooking or boiling. A must try juice of its own kind.

Falsa Sherbet n Falsa Kulfi

Ingredients to make Falsa Sherbet n Falsa Kulfi

  • Falsa 500 g
  • sugar 250 g
  • water 1/2 litre

How to make Falsa Sherbet n Falsa Kulfi

  1. Wash falsa very lightly and delicately.
  2. Soak it in just enough water for an hour or so.
  3. Add sugar while soaking only so that it dissolves during the soaking period only.
  4. After an hour (can keep longer also), rub it with your hands to extract pulp.
  5. Pass this mixture through a sieve.
  6. You will get thick juice.
  7. For kulfi, this first Juice extracted from Falsa is poured into the moulds and put in freezer.
  8. Now, put the leftover seeds in the sieve, into a vessel. Add some more water. Rub with hands and again pass through the sieve.
  9. Repeat this process 1 or 2 times more till you are left with just seeds.
  10. Collect all the juices extracted in 3-4 times and chill in refrigerator.
  11. Before serving, add rock salt and serve.

My Tip:

Add rock salt only at the time of serving. If added earlier, it deteriotates the taste. Remains good in the refrigerator for 3-4 days. Incase, you wish to preserve it for long, then freeze the juice and later on , thaw and use.
