ABOUT Chanar Payesh RECIPE

When it comes to sweets, nothing can beat the taste of Bengali sweets. It doesn't matter if a person is Bengali or from a different region, Bengali sweets are everyone’s favourite. These sweets are mostly made from milk and milk products, therefore, it has to be consumed within 1-2 days itself. One such creamy luscious authentic and traditional Bengali sweet served during special occasions is Chanar Payesh. Thick full cream milk, reduced to half of it's consistency and cooked with fresh home made cottage cheese dumplings is simply delectable. Serve Chanar Payesh as a sweet dish during your house parties or festivals.

Ingredients Serving: 4

  1. Cottage cheese/chenna/paneer - 250 gms
  2. Full cream milk - 500 ml
  3. Sugar - 1/3 cup
  4. Cardamom powder - 1/2 tsp
  5. Saffron - few strands (soaked in 2 tbsp milk)
  6. Cashews - 10 chopped
  7. Raisins - 10
  8. Almonds - 6 chopped
  9. Pistachios - few chopped
  10. Garnish - nuts, rose petals, saffron (Optional)

Instructions

  1. To begin with the chanar payesh, take fresh paneer in a bowl and mash it well with your hands to make it smooth and moist.
  2. Pinch marble sized chennas and make dumplings out of it and. Keep them aside.
  3. Boil full cream milk in a thick bottomed pan and reduce it till it turns off white and creamy.
  4. Keep scraping the cream from sides and add into the boiling milk. Add sugar, saffron milk and cardamom powder along with chopped cashews, almonds and pistachios and cook it for another few minutes.
  5. Keep stirring at regular intervals to avoid the milk getting burnt. Once the milk comes to a thick and creamy consistency, slide in the chenna dumplings and cook for another 5-6 mins on a low flame.
  6. Add raisins and turn off the gas, keep aside to cool. Refrigerate the payesh and serve it chilled.
  7. Serve Chanar Payesh as a sweet dish during your house parties or festivals.
