Ingredients Serving: 4

  1. For the bhallas :
  2. Urad Dal - 1 cup
  3. Salt - 1/2 tsp
  4. Cumin seeds - 1/2 tsp
  5. Refined oil
  6. Water
  7. Imli chutney :
  8. Tamarind soaked in water - 1 cup
  9. Roasted Jeera powder - 1 tsp
  10. Sugar (as required)
  11. Salt (as required)
  12. Green chutney :
  13. Coriander leaves - 1cup
  14. Pudina leaves - 1 Cup
  15. Tamarind - 1 tsp
  16. Garlic Clove - 1
  17. Green chillies - 4
  18. Sugar - 1 tbsp
  19. Salt - 1/2 tsp
  20. Curd mixture :
  21. Curd - 1 cup
  22. Sugar - 2 tbsp
  23. Salt - 1/2 tsp
  24. Other Ingredients :
  25. Chaat masala powder
  26. Roasted jeera powder
  27. Red chilly powder
  28. Sev
  29. Chopped coriander leaves

Instructions

  1. For the vadas : Soak the urad dal over night and grind them next day with very little water.
  2. Whisk in the salt and cumin seeds. Heat ample amount of oil, scoop small amounts of batter into it and fry the bhallas.
  3. Mix lukewarm water with little salt, strain the bhallas into it. Dip them for few seconds and drain them. This keeps the bhallas soft.
  4. For the imli chutney : In a pan , heat the tamarind water and the pulp. Add the sugar and little salt. Cook till desired consistency and taste is acquired. Sprinkle roasted jeera powder.
  5. For the green chutney : Grind all the above ingredients in a blender with little water. The proportion is according to personal taste.
  6. For the curd mix : Whisk the curd with sugar, salt and water. I like it a bit sweet, so added more sugar compared to salt.
  7. Assembly : Pour the curd into a bowl, add the bhallas and Mix, add tamarind chutney, green chutney, sprinkle the powdered masalas and sev, garnish with coriander leaves.
