noor jahani kofta is a vegetarian’s delight from the royal kitchens of awadh. this rich and creamy dish is prepared using cashew nut paste which gives this dish its unique flavour.

Ingredients Serving: 4

  1. for stuffing:
  2. 1/2 cup boiled and grated carrots
  3. 1/4 cup chopped raisins
  4. for koftas:
  5. 1 potato boiled and grated
  6. 100 grams paneer/cottage cheese grated
  7. 1.5 tbsp cornflour
  8. 1 green chili chopped
  9. salt to taste
  10. oil for deep frying
  11. for gravy:
  12. 4 tbsp oil
  13. 3/4 cup boiled onion paste
  14. 1/2 cup cashew nut paste
  15. 1 tsp ginger-garlic paste
  16. 1/2 tsp turmeric powder
  17. 1/2 tsp red chili powder
  18. salt
  19. 1 tsp garam masala
  20. 1 cup water
  21. 2 tbsp cream
  22. some cashews for garnishing

Instructions

  1. for stuffing:
  2. in a bowl add carrots and raisins. mix well and keep aside
  3. for koftas:
  4. take grated potato. add paneer, cornflour, green chili and salt
  5. mix well
  6. pinch a small ball out of it and flatten the ball to a disc shape
  7. put stuffing in the center and cover with the part from all the sides
  8. roll it into a round shape
  9. heat oil in a kadai and deep fry the koftas till golden brown
  10. for gravy:
  11. heat oil in a kadai
  12. add onion paste and saute till onions are a little pink
  13. add ginger-garlic paste and continue to saute
  14. add turmeric powder and red chili powder, cook for 1-2 minutes
  15. add cashew nut paste and saute stirring continuously
  16. add salt and garam masala powder, mix well
  17. pour water and let it cook on low flame for 10 minutes. switch off the flame
  18. add koftas to the gravy, garnish with cream and cashews
  19. serve hot
