Dates and nuts loaf

Ingredients to make Dates and nuts loaf

  • Whole wheat flour - 1 1/4 cup
  • Baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • Seedless dates - 20
  • Milk - 1 1/4 cup
  • oil - 1/2 cup
  • Mixed nuts - 1/3 cup

How to make Dates and nuts loaf

  1. Soak the dates for 3 to 4 hours in the milk.
  2. Now grind to a fine paste.
  3. Preheat oven to 180 °.
  4. Remove 2 spoons of flour and coat the nuts. Seive remaining flour with baking powder and soda 4 to 5 times.
  5. Whisk the oil in the milk dates paste till well combined
  6. Add flour to it in batches and cut and fold the mix . Add half of the nuts and fold.
  7. Grease an 8 × 4 1/2" loaf pan and dust well with flour. Pour the cake batter. Garnish with remaining nuts.
  8. Reduce oven temperature to 170° and bake the cake for 40 to 50 minutes. Check in the last 10 minutes with skewer for doneness.
  9. Leave for 10 minutes in the loaf pan to cool
  10. Loosen the sides and demould. Cool further for 1 to 2 hours on a wire rack.
  11. Cut with a sharp serrated knife for clean cuts. Enjoy your tea time with this delicious bake.
