Avial

Ingredients to make Avial

  • carrots - 1
  • Beans - 1/2 cup
  • Brinjal - 1
  • Drumsticks - 1/2 cup
  • onion (sliced) - 1
  • green chilly - 1
  • cumin Seeds - 1 Tsp
  • ginger - 1/2 inch
  • Grated coconut - 1/4 th cup
  • curd - 1 Tbsp
  • turmeric powder - 1/4 th tsp
  • salt
  • coconut oil/refined oil

How to make Avial

  1. Heat a pan with little oil. Add half the cumin seeds and let them crackle.
  2. Add the sliced onion and saute till translucent. Then add all the vegetables, chilly except the brinjal.
  3. Add salt and turmeric powder. Stir and cook with lid on for couple of minutes.
  4. Then add the brinjal and stir. Cook further until the vegetables are almost cooked.
  5. Make a paste of the coconut with left over cumin seeds and ginger,with some water.
  6. Add the curd and the above mixture to the vegetables. Cook for few more minutes. Check for seasoning and serve.
  7. P.S : you can also add raw bananas, yam and potatoes.
