Ingredients to make Khatte meethe baingan

  • 250 gms Baby brinjals
  • salt 1 tesp
  • red chilli powder 1/2 tesp
  • coriander powder 1 tesp
  • Chat masala 1 tesp
  • ghee 1 tbsp
  • cumin seeds 1 tesp
  • fennel seeds 3/4 tesp
  • 3 onions
  • 2 tomatoes
  • 2 green chilies
  • 1 tbsp tamarind pulp
  • 2 tbsp sugar
  • 1 tesp garam masala
  • 1 tbsp green coriander leaves

How to make Khatte meethe baingan

  1. MIX TOGETHER 1/2 TESP SALT, 1/2 TESP RED CHILLI POWDER, 1 TESP CORIANDER POWDER,1 TESP CHAT MASALA.
  2. MAKE SLITS TO QUARTER BABY BRINJALS.
  3. FILL MIXED SPICE POWDER IN SLOTTED BRINJALS AND KEEP ASIDE.
  4. IN 1 TBSP GHEE ROAST 1 TESP CUMIN SEEDS AND 3/4 TESP FENNEL SEEDS.
  5. ADD 2 FINELY CHOPPED BIG ONIONS. SAUTE.
  6. WHEN ONIONS START CHANGING COLOR ADD 2 FINELY CHOPPED TOMATOES WITH 1/2 TESP SALT AND 2 GREEN CHILIE
  7. MIX WELL AND COOK COVERED ON SIM FOR AROUND 3-4 MINUTES, TO GET TOMATOES MUSHY.
  8. ADD BRINJALS AND TOSS WELL.
  9. COOK COVERED FOR 5 MINUTES.
  10. ADD 1/4 CUP WATER AND COOK COVERED FOR OTHER 6-8 MINUTES TO GET BRINJALS NICE SOFT.
  11. ADD 1 TBSP TAMARIND PULP AND 2 TBSP SUGAR. COOK FOR 2-3 MINUTES MORE.
  12. FINALLY SPRINKLE 1 TESP GARAM MASALA AND 1 TBSP GREEN CORIANDER LEAVES AND IT'S DONE.
  13. SERVE WITH CHAPATIS.
