About Aamras Zarda Pulao Recipe

Aamras means mango juice .zarda means yellow.. pulao means Rice mixed with some dryfruits or freshfruits here according to my sweetened recipe of Mughlai Cuisine.In this recipe i have given a twist by adding mango puree in the traditional sweetened zarda pulao thus adding more taste and flavour to it..

Aamras Zarda Pulao

Ingredients to make Aamras Zarda Pulao

  • Basmati rice 200 g
  • Ripened mango of any variety .one
  • saffron strands 20 g
  • sugar 50 g
  • Desi ghee 1 table spoon
  • almonds 20 g
  • raisins 20 g
  • Dried dates 2 pieces
  • bay leaf one
  • cloves 2-3
  • cinnamon 2 small sticks
  • Lesser caramom 3-4
  • Bigger cardamom 1
  • mango thin slices cut vertically 4-5 for garnishing

How to make Aamras Zarda Pulao

  1. Soak Basmati Rice for one hour atleast .
  2. Also soak few strands of saffron in luke warm water .
  3. Peel a mango of your desirable variety ..i have taken here safeda mango..Take out the stone of the mango and chop the mango and finally put them in a blender by adding little water to make a fine juicy puree .
  4. Now in a pressure cooker add desi ghee and heat it
  5. In this now add bay leaf , cloves , cardamom , cinnamon , almonds and raisins and roast a little .
  6. Now add the presoaked rice and saffron strands.
  7. Add sugar .Stir all the ingredients thoroughly .
  8. Add the required amount of water .Close the lid and give two whistles ..The zarda pulao would be ready But it is still incomplete without the addition of aamras or mango pureed juice
  9. Stir it throughly ..so that all the ingredients infuse properly and nice aroma starts coming out ..Garnish with dried dates , almonds, raisins and dry fruit of your choice ..serve this delicious aromatic innovative Aamras zarda pulao warm .

My Tip:

You can little milk also in the pulao. Add cashew nuts and dried coconut flakes in it.
