ABOUT Banana toffee RECIPE

Toffee banana is a classic Chinese dessert. Slices of banana are battered and deep-fried, then coated in toffee and sesame seeds making them deliciously crisp.

Ingredients Serving: 4

  1. 100 gram maida
  2. 50 gram cornflour
  3. 3 bananas, thickly sliced diagonally 
  4. 200 gram sugar 
  5. Refined oil, for deep-frying 
  6. black and white sesame seeds, for sprinkling 
  7. 1 bowl ice cold water

Instructions

  1. Mix together maida and cornflour
  2. add water and mix until smooth.
  3. Mix 1 spoon refined oil
  4. Heat refined oil in a wok
  5. Dip each banana slice in the batter
  6. Fry until golden and crispy
  7. Take out on paper towel.
  8. Heat sugar in a pan
  9. When sugar is caramalized remove from heat
  10. then working quickly and one at a time, add the fried banana to the caramel and turn to coat.
  11. Drop into a large bowl of iced water to set the caramel. 
  12. Drain immediately, then sprinkle with black and white sesame seeds.
