Mango jelly dry fruits pickle

Ingredients to make Mango jelly dry fruits pickle

  • 1 raw mango peeled and grated
  • 1/2cup jaggery
  • 1/4cup rasini
  • 2 tbsp melon seeds
  • 1 tbsp chopped almonds
  • 1 tbsp chopped cashew
  • 1/2cup deseed chopped dates
  • Handful of curry leaves
  • 1 tsp cumin
  • 2 tbsp ghee
  • 1/2 cup water
  • 1 tsp fennel seed
  • 2 tbsp chilli powder
  • 1/4 tsp salt
  • 2 tbsp fennel seeds(garnish)

How to make Mango jelly dry fruits pickle

  1. -Heat ghee in a fry pan, once heated add cumin and fennel seed to it
  2. Once spluttered,add curry leaves and saute for 1 mins
  3. Now add grated mangoes and cook till they are tender coconut
  4. Now add all chopped dry fruits and saute for 2 minute
  5. Now add jaggery and let it's breakdown completely
  6. Now add water and cook in simmer,let everything is cooked ,soft and tender
  7. Now add salt and red chilli powder to it and cook for 2mins more
  8. In a mini fry pan roast fennel seeds,once started spluttering turn off the gas
  9. With help of rolling pin crush the fennel seeds into powder
  10. Now put the fennel powder into pickle and mix
  11. Turn off the gas ,let it cool completely and store air tight container
