ABOUT Rabdi RECIPE

It is one of the traditional sweet dish loved by all. It is very easy to make and very hard to resist. Rabdi is basically thickened milk with layers of cream and dry fruits. It taste best when served chilled.

Ingredients Serving: 4

  1. 1 1/2 litre milk
  2. 10-12 almonds sliced
  3. 10-12 pistachio sliced
  4. 1/4 cup sugar
  5. 1/8 tsp saffron strands
  6. 1/4 tsp Cardamom Powder

Instructions

  1. In a heavy botton pan add in milk. Bring the milk to a boil. Lower the flame to medium and let the milk simmer.
  2. After some time a layer of cream will form, gently collect it with spatula and stick it to the side of the pan.
  3. Keep on simmering the milk like this and collecting the cream layer on the sides.
  4. In between stir the milk occasionally so that the milk does not get burnt from the bottom
  5. In the meantime add the saffron strands in 2 tbsp of warm milk and keep aside.
  6. Once the milk is reduced to 1/3 add in sugar, cardamom powder and the saffron mixture. Mix gently
  7. Bring it to a boil, stirring it continuously. Turn off the flame.
  8. Scrape off the cream layer from the sides of the pan and add it to the thickened milk.
  9. Add in sliced almonds and pistachio. Mix gently
  10. Garnish with sliced almonds, pistachio and saffron strands. Serve chilled.
