Khatte Meethe Baingan

Ingredients to make Khatte Meethe Baingan

  • 250 gms Baby brinjals
  • salt 1 tesp
  • red chilli powder 1/2 tesp
  • coriander powder 1 tesp
  • Chat masala 1 tesp
  • ghee 1 tbsp
  • cumin seeds 1 tesp
  • fennel seeds 3/4 tesp
  • 3 onions
  • 2 tomatoes
  • 2 green chilies
  • 1 tbsp tamarind pulp
  • 2 tbsp sugar
  • 1 tesp garam masala
  • 1 tbsp green coriander leaves

How to make Khatte Meethe Baingan

  1. MIX TOGETHER 1/2 TSP SALT, 1 TSP EACH OF RED CHILLI, CORIANDER & CHAT MASALA POWDERS
  2. MAKE 2 SLITS TO DIVIDE 250 GMS BABY BRINJALS INTO QUARTERS LIKE THIS
  3. FILL THE MIXED SPICE POWDER THROUGH THE SLITS, SET ASIDE
  4. HEAT 1 TBSP GHEE, ADD 1 TSP CUMIN SEEDS, 3/4 TSP FENNEL SEEDS
  5. ADD 2 FINELY CHOPPED ONIONS, SAUTE UNTIL GOLDEN BROWN
  6. ADD 2 CHOPPED TOMATOES, 1/2 TSP SALT, 2 CHOPPED GREEN CHILLIES
  7. COVER & COOK ON LOW HEAT FOR 3-4 MINS TILL SOFT
  8. ADD THE STUFFED BRINJALS, MIX, COVER & COOK FOR 5 MINS
  9. ADD 1/4 CUP WATER, COVER & COOK FOR 6-8 MINS
  10. ADD 1 TBSP TAMARIND PULP, 2 TBSP SUGAR, COOK FOR 2-3 MINS
  11. SPRINKLE 1 TSP GARAM MASALA, 1 TBSP CHOPPED FRESH CORIANDER, TAKE OFF HEAT
  12. SERVE HOT
