This is a very special recipe from my moms kitchen which reminds me of my childhood

Aloo Paratha

Ingredients to make Aloo Paratha

  • For dough
  • 1 cup wheat flour
  • salt to taste
  • 1 Teaspoon oil
  • For stuffing
  • 2 large boiled peeled potatoes
  • 1 tablespoon green chili paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon crushed garlic
  • 4 to 5 curry leaves
  • 2 tablespoon chopped fresh corriander
  • salt to taste
  • 1 tablespoon oil
  • ghee for shallow frying

How to make Aloo Paratha

  1. For dough
  2. In a mixing bowl add wheat flour, salt, oil and water to make soft dough keep aside for resting for 15 to 20 minutes
  3. In a pan add oil, cumin seeds, curry leaves, mustard seeds fry them till it crackles then add garlic,green chili cook it for some time add boiled mashed potatoes, coriander leaves and mix them well cook for some time and keep it aside
  4. make small balls of dough with rolling pin roll them about 4 to 5 inch diameter round try making all the rounds of same size
  5. On the rolled circle place the stuffing in center and keep some space from sides now cover it with other round and seal it
  6. Grease a pan with a little ghee and heat on a medium flame.
  7. Apply some ghee and cook the parathas until both sides are golden and cooked through.
  8. Serve hot with Mango Pickle or chutney of your choice
