About Waghariyu ( Instant sweet and sour mango chuteney.) Recipe

I was not very fond of summer vegetables so my Mom was making this Waghariyu for me and her condition was I have to eat 1 roti with veges and 1 roti with "waghariyu" And because of that I started liking vegetables too..

Waghariyu ( Instant sweet and sour mango chuteney.)

Ingredients to make Waghariyu ( Instant sweet and sour mango chuteney.)

  • mango Totapuri 2 around 300 to 350 grms / Rajapuri mango.
  • jaggery 100 to 150 grms ( chopped fine)
  • salt 1 tbsp ( to taste)
  • turmeric 1/ 4 tsp
  • chilli powder 1 tsp ( more according to taste)
  • oil 2 tbsp + 1 tsp.
  • asafoetida 1/2 tsp
  • mustard seeds 1/2 tsp
  • Methi dana ( whole fenugreek seeds )1/2 tsp
  • Whole dry red chili 2
  • cumin crushed between palms 1 tsp.
  • cloves 4 to 5
  • cinnamon Stick 1 small.

How to make Waghariyu ( Instant sweet and sour mango chuteney.)

  1. Wash, peel and Chop mango in cubes . I have used Totapuri mango as it is less sour so you require less jaggery.
  2. Heat 2 tbsp oil in a pan ( kadhai). Add Asafoetida, mustard seeds, fenugreek seeds .
  3. Add cloves and Cinnamon stick too.
  4. After it Splitter add dry red chili. Fry for 1 minute.
  5. Add 2 cups water. Add mango pieces. Add salt and Turmeric .
  6. Let it boil. Cover and cook for 10 minutes.
  7. After 6 to 8 minutes add Jaggery.
  8. Heat 1 tsp oil . Add chilli powder and add in boiling mixture. Add Cumin seeds.
  9. Check consistency. It should be 1 string.
  10. Adjust salt and masala. Let it cool. Enjoy.
  11. You can eat this with Roti, Bhakhari, Thepala.

My Tip:

If mango is sour adjust jaggery.. Totapuri mango requires less jaggery than Rajapuri mango.
