I was not very fond of summer vegetables so my Mom was making this Waghariyu for me and her condition was I have to eat 1 roti with veges and 1 roti with "waghariyu" And because of that I started liking vegetables too..

Wash, peel and Chop mango in cubes . I have used Totapuri mango as it is less sour so you require less jaggery.
Heat 2 tbsp oil in a pan ( kadhai). Add Asafoetida, mustard seeds, fenugreek seeds .
Add cloves and Cinnamon stick too.
After it Splitter add dry red chili. Fry for 1 minute.
Add 2 cups water. Add mango pieces. Add salt and Turmeric .
Let it boil. Cover and cook for 10 minutes.
After 6 to 8 minutes add Jaggery.
Heat 1 tsp oil . Add chilli powder and add in boiling mixture. Add Cumin seeds.
Check consistency. It should be 1 string.
Adjust salt and masala. Let it cool. Enjoy.
You can eat this with Roti, Bhakhari, Thepala.
