Ingredients to make Ripen Wild Mangoes Menaskai

  • Ripe wild mangoes 5-6
  • water 1/2 ltr
  • salt to taste
  • jaggery 1/2 cup
  • urad dal 2 tsp
  • coriander seeds 2 tsp
  • jeera 1 tsp
  • Cooking oil /coconut oil 3 tsp
  • Black sesame 4-5 tsp
  • red chilli 2-4
  • turmeric powder 1/4 tsp
  • tamarind 1/4 lemon sized
  • Grated coconut 1 cup
  • For seasoning..
  • mustard seeds 1 tsp
  • red chilli 1
  • curry leaves few
  • Cooking oil 1 tsp

How to make Ripen Wild Mangoes Menaskai

  1. WASH, PEEL AND SQUEEZE THE MANGO SKINS, COLLECT THE JUICE
  2. ADD SOME WATER, SALT TO TASTE, COVER AND COOK WITH MANGO SEEDS
  3. IN THE MEANTIME HEAT OIL
  4. FRY URAD DAL, CORIANDER SEEDS, JEERA, RED CHILLI, BLACK SESAME IN LOW FLAME TILL GOOD AROMA
  5. ADD TURMERIC POWDER AND SAUTE, TURN OFF THE FLAME
  6. GRIND SMOOTHLY FRIED INGREDIENTS, GRATED COCONUT, TAMARIND BY ADDING SUFFICIENT WATER
  7. CHECK THE COOKNESS, ADD JAGGERY
  8. AFTER DISSOLVE OF JAGGERY ADD GROUND MASALA
  9. IF NECESSARY ADD SOME WATER
  10. MIX WELL, BRING IT TO BOIL
  11. ALLOW IT TO BOIL FINELY IN SIMMER
  12. COOK UNTIL GRAVY THICKENS SLIGHTLY
  13. SEASONING
  14. ADD SEASONING AND SERVE WITH HOT RICE AND A DOLLOP OF GHEE
