Ingredients to make Cheesy Potato Baskets

  • potatoes 6 medium sized
  • Black eyed beans 4 Tbsp (soaked 4-5 hours)
  • capsicum 1 small (chopped)
  • Pizza sauce 2 Tbsp
  • Processed cheese
  • salt to taste
  • Green chutney
  • tomato ketchup

How to make Cheesy Potato Baskets

  1. TAKE 4 TBSP SOAKED BLACK EYED BEANS / LOBIYA, ADD SALT, PRESSURE COOK UPTO 3 WHISTLES
  2. PEEL, PRICK 6 POTATOES, SOAK THEM IN SALTY WATER FOR 15 MINS
  3. DRAIN & MICROWAVE ON HIGH FOR 5 MINS
  4. ALLOW TO COOL FOR 5 MINS, CUT INTO HALVES, LENGTHWISE LIKE THIS
  5. SCOOP OUT SKIN FROM THE CENTRE
  6. STAIN THE COOKED BLACK EYED BEANS, ADD A LITTLE SALT
  7. ADD 2 TBSP PIZZA SAUCE
  8. ADD 1 CHOPPED CAPSICUM, MIX WELL, FILL EACH POTATO HALF WITH THIS MIXTURE
  9. PLACE POTATO BASKETS ON A GREASED BAKING DISH, GRATE CHEESE ON TOP
  10. BAKE ON 200 DEGREES FOR 5 MINS
  11. SERVE HOT
