Ingredients Serving: 4

  1. Cauliflower 1/2 cup
  2. Green peas 1/4 cup
  3. Potato 1 medium
  4. Capsicum 1/4 cup
  5. Carrots 1/4 cup
  6. Cottage cheese 50 gms
  7. French beans 10-12
  8. Cashews 2 tbsp
  9. Makhana 2 tbsp
  10. For gravy:
  11. Oil 1 tbsp
  12. Butter 1 tbsp
  13. Cloves 4
  14. Black pepper 6
  15. Cinnamon 1 inch
  16. Black cardamom 1
  17. Cumin seeds 1 tsp
  18. Asafetida 1/4 tsp
  19. Poppy seeds 1 tsp
  20. Melon seeds 1 tsp
  21. Almonds 10
  22. Cashews 10
  23. Tomatoes 1/2 cup
  24. Garlic 5 cloves
  25. Ginger 1 inch
  26. Green chilli 1 big
  27. Onion 1/4 cup(thinly sliced)
  28. Cream 2 tbsp
  29. Garam masala 1/2 tsp
  30. Turmeric 1/2 tsp
  31. Red chilli powder 1 tsp
  32. Coriander powdee 1 tsp
  33. Salt
  34. Kasoori methi 1/2 tsp
  35. Fresh coriander for garnishing

Instructions

  1. SOAK 1 TSP OF POPPY SEEDS,10 CASHEWS,10 ALMONDS AND 1 TSP OF MELON SEEDS IN WARM WATER FOR 15 MINUTES.
  2. THESE ARE THE NINE GEMS OF NAVRATAN KORMA:CAULIFLOWER,POTATOES,GREEN PEAS,CARROTS,FRENCH BEANS,CAPSICUM,COTTAGE CHEESE,MAKHANA AND CASHEWS
  3. BOIL CAULIFLOWER FLORETS,FRENCH BEANS CUT INTO 1 INCH PIECES,CARROTS,POTATOES AND GREEN PEAS IN SALTED WATER TILL 3/4TH COOKED.
  4. TAKE A TBSP OF GHEE AND SAUTE 2 TBSP MAKHANA AND 2 TBSP CASHEWS.
  5. THEN SAUTE COTTAGE CHEESE PIECES.
  6. REMOVE WHEN THEY BECOME LIGHT BROWN.
  7. NOW SAUTE CAPSICUM PIECES FOR 2 MINUTES.
  8. REMOVE SKIN OF ALMONDS AND GRIND THE SOAKED NUTS INTO A SMOOTH PASTE.
  9. TAKE A TBSP OF BUTTER AND 1 TBSP OF OIL IN A PAN.
  10. ADD 1 TSP CUMIN SEEDS AND 1/4 TSP ASAFETIDA.
  11. ADD DRY SPICES-4 CLOVES,6 BLACK PEPPERS,1 PIECE CINNAMON AND 1 BLACK CARDAMOM.
  12. ADD 1/4 CUP OF THINLY SLICED ONIONS.SAUTE TILL THEY TURN SLIGHTLY BROWN.
  13. NOW ADD THE TOMATO PASTE.SAUTE FOR 2 TO 3 MINUTES.
  14. ADD THE GROUND NUTS PASTE.
  15. ADD 1/2 TSP TURMERIC,1 TSP CHILLI POWDER AND 1 TSP CORIANDER POWDER.ALSO ADD SALT.
  16. MIX EVERYTHING NICELY.
  17. ADD 2 TBSP BEATEN CREAM.
  18. ADD 1 CUP WATER AND SIMMER ON LOW FLAME.
  19. ADD 1/2 TSP GARAM MASALA AND KASOORI METHI.
  20. ADD THE BOILED VEGETABLES,SAUTED CAPSICUM,PANEER,CASHEWS AND MAKHANA TO THE GRAVY.
  21. MIX LIGHTLY AND COVER.COOK FOR 2 MINUTES AT LOW FLAME.
  22. OUR RICH AND CREAMY NAVRATAN KORMA IS READY.GARNISH WITH FRESH CORIANDER AND SERVE.
