Chicken ghee roast

Ingredients to make Chicken ghee roast

  • To marinate:
  • 1/2 kg tender chicken (small pieces with bones/boneless)
  • 1 tbsp lime juice
  • 1/4 tsp turmeric powder
  • 2 tsp kashmiri chilli powder
  • 1 tbsp ginger-garlic paste
  • 1 tsp salt
  • For frying:
  • 2 tbsp ghee
  • 1 tsp freshly crushed peppercorns
  • 2 tsp meat masala
  • 3 onions sliced
  • 2-3 green chillies, slit
  • 3 pods garlic, sliced
  • 2 sprig curry leaves
  • 2 sticks of cinnamon
  • 2-3 green cardamoms
  • 6-7 cloves
  • salt

How to make Chicken ghee roast

  1. Marinate the chicken pieces with the ingredients mentioned under " to marinate".
  2. Heat a wok, add 2 tbsp ghee, then add whole spices. Saute and fry until it's fragrant.
  3. Add the onion, garlic, green chillies and saute and fry until they are brown but not burnt.
  4. Add meat masala and pepper and fry until its fragrant.
  5. Add the chicken pieces and cook in a high flame for 4-5 mins, then lower the flame and cook for 15-20 mins while stirring occasionally. Adjust the salt.
  6. End it with curry leaves.

Very nice recipe just wanted to know we need to take whole 3 pod of garlic or only 3 flakes of garlic and which brand meat masala you hv used can we use tandoori chicken masala instead of it.
